The word Cascabel means Rattle in Spanish. The seeds of this chile separate
from the pod and rattle around the inside of the dried chile. The plants grow
in the wild on the Pacific coast of Mexico. Cascabel Chiles are dark reddish
brown with a shiny, smooth, thick skin. This chile is a 4 on the heat scale.
Scoville units 8,000 - 12,000
Suggested Use: Cascabel Chiles are medium hot. Use in sauces, stews
and soups. It's ideal for adding a hint of heat. The skin does not
dissolve easily, so we recommend removing the chiles when the desired
hotness is achieved. Basic Preparation: Rinse with warm water. Soak
in hot water for 10 minutes. Once rehydrated, dice or puree and
add to a recipe.
